Receta Mini Banana Walnut Cake Using Pressure Cooker | Christmas Recipes
INGREDIENTS
Makes 2 small cakes
Total Preparation Time - 40 to 50 minutes
- Banana - 2 (chopped)
- Egg - 1
- Maida / All purpose flour - 6 tbsp + 2 tbsp
- Walnuts - 20 grams
- Sugar - 75 grams
- Salt - 1/4 tsp
- Vanilla essence - 1/4 tsp
- Ghee - For greasing the cake moulds

Pressure cooker (remove the whistle/regulator, you won't need it throughout the whole process)

PREPARATION METHOD
Preheat a pressure cooker in the following way. Take a pressure cooker and place its pan on flame, inside it place the separator plate and close the cooker with its lid (remove the whistle or regulator from the lid and then use it). Leave this set up undisturbed for about 10 minutes on medium flame.
Chop walnuts into smaller pieces, then add a spoon of flour to it and rub well. This helps avoid the nuts from sinking in the batter.
To a blender add the following ingredients and blend well into smooth batter for about 3 to 5 minutes. Then add the chopped and floured walnuts into the batter and mix well.

2. Egg - 1 (both ylk and egg white)
3. Maida / All purpose flour - 6 tbsp
4. Sugar - 75 grams
5. Salt - 1/4 tsp
6. Vanilla essence - 1/4 tsp
Now grease the cake moulds with ghee, then dust with 1 tbsp flour, tap the moulds well and remove the extra flour from the moulds and and set aside.
Pour the batter into these greased and floured moulds (do not pour till the brim). Place into the preheated cooker and cook for 40 minutes on low flame. Open the lid and insert a toothpick or knife , if it comes out clean then the cake is ready.
Remove from flame, the cake would slide out of the moulds easily, so no need of loosening the cakes.
Cool completely before serving.
TIP 1: This is a cake in which banana dominates the recipe and the flour ratio is less. So you will not get the airy texture of cakes. But the cake remains soft and delicious.
TIP 2: You can substitute walnuts with cashews and raisins also. Just make sure to dust them with flour so that they do not sink while cooking.
TIP 3: Do not store for more than a day.
TIP 4: When the cake is ready you will be able to smell this and this is the best trick to find out if cakes are ready.
