Receta Mini Doughnuts... vegan stylee
Yes... they're so good I had to put two Es in 'style'... it's not a typo.
There are two things that I see basically everyone post on: 1. home made pop tarts and 2. mini doughnuts. Is anyone sick of seeing these posts? I hope not because luckily for me they are my favorites! I see another post for one or the other and I think to myself, 'oh! I've got to do that!' Well, ha! I was so butt-hurt about my birthday, or lack thereof, that I spent the better half of last Wednesday on the internet buying myself stuff. One of those 'stuffs' was a mini doughnut pan which, every time I see another mini doughnut posts, I want one even more desperately. Happy Birthday to me!
Last night, my 'night to get back in the kitchen' didn't happen in the 'cooking dinner' sense. My fantastical parents were headed out of the office to go eat and graciously invited me along since I was a baseball widow. Instead of cooking we sat on the deck of Scotty Brown's, sipped wine and had a lovely dinner; lovely aside from the fact that it was 92 degrees and I was sitting in the sunshine, melting. Which leads me to digress for a moment and say 'thank you summer, for finally showing your face... geeze, it took you long enough. What? Did you have something better to do?' Now that I"m done sassing summer I will move forward. After dinner I was even less motivated to cook anything, so I didn't (aside from the mini doughnuts, that is). See bottom of this post for what I did when I got home from dinner.
Mini doughnuts! So I got home from dinner and I felt guilty that I wasn't going to make dinner so, despite the now 91 degree weather, I opened all the windows, fired up the oven and started on my mini doughnut quest. If it pleases you, I'll also let you in on this little tidbit: It was so dang hot I baked them in my bathing suit... perhaps I should come up with a different name for them, like 'bikini bites' or something like that. I'll work on it and let you know. Oh, and the recipe... it was too hot to think up one on my own so I veganized the recipe on the back of the pan wrapper... and I altered the method a little too; yep, and here it is:
Need:
- 3 teaspoons egg replacer
- 4 Tablespoons soy milk
- 2 cups all purpose flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 Tablespoon Earth Balance
- 3/4 cup soy milk
- 1 teaspoon vanilla
- For vanilla glaze:
- 1 cup confectioner's sugar
- 1 teaspoon vanilla
- 2 Tablespoons hot water
- For chocolate glaze:
- 3/4 cup unsweetened cocoa
- 1/4 cup confectioner's sugar
- 1 teaspoon vanilla
- 2 Tablespoons water
- For cinnamon sugar:
- Cinnamon
- Sugar
Duh...
Do:
Preheat your oven to a lovely 325 degrees.
In a small bowl, combine the egg replacer and 4 Tablespoons soy milk. Whip with a fork until fully combined and light and fluffy-ish.
In a medium bowl, mix together flour, sugar, baking powder and salt. Combine well.
In your Kitchenaid, or another bowl (but that's way too much work) combine the Earth Balance, 3/4 cup soy milk and vanilla. Mix together on low until fully combined. Side note: luckily for me the 91 degree weather made for some quickly softening Earth Balance... otherwise it would have taken longer to combine.
With your mixer on low, slowly add the flour mixture until fully added. Let mix only until just combined. When it's just combined, turn of the machine. Don't over mix it. Is that clear? Am I repeating myself?
Spray your mini doughnut pan and fill each space about 1/2 to 2/3 of the way full. Note: if you over fill the pan, your doughnuts will have an alarming muffin top. Fine by me, I sport a pretty sick muffin top myself... just be warned.
Also, I suppose you could use a mini muffin pan but I tried that once (on another recipe) and they were so nasty the dog wouldn't even eat them... I contemplated posting some pictures because they actually looked really delicious but they were honestly incredibly gag-me.
Bake your first set for 8 to 9 minutes. The original instructions said 8 but I went for 9. Give it a try.
While your minis are cooking, whip up your glazes. In separate bowls combine ingredients for each; it really is that simple!
When done, remove mini doughnuts, let cool and dip into your favorite topping. Note: I did a regular glaze, chocolate glaze and cinnamon sugar. The chocolate was our favorite!
Side note: my parents bought me a teeny tiny tripod for my birthday... they know I take a lot of food pictures and wanted to make it easier. It's pretty much the best thing ever! I can take a picture and handle the food all at once! I am still mastering 'angle' though, so disgregard the chair in the background...

Serve:
Put them in your mouth.
They might think you're odd,but that's ok. You could also make a mini Spud-Nut if you wanted to do them for dessert. My mom has very fond memories of her local Spud-Nut shop over in E-WA. She always talks about going in there and getting a Spud-Nut for a dime or some insanely cheap price like that. For all of you people who don't know what a Spud-Nut is, it's basically a doughnut with ice cream in the hole and whip cream on top. Talk about a muffin top.
