Mini Italian Quiches

A delicious quiche inspired by the more traditional Italian Quiche but made into individual servings for parties, pot lucks and picnics! Or simply to have at home and enjoy with the family or take some to work with you!

Ingredientes

  • Batter:
  • 1/2 cup grated cheese (Swiss, Parmesan, Provolone, etc...)
  • 3/4 cup Bisquick™ Baking Mix
  • 4 eggs
  • 1 cup milk
  • 1 cup heavy cream
  • 1/4 cup (4 Tbsp) nutmeg
  • 1/2 tsp each salt and pepper
  • 1/2 onion, chopped
  • 1 med clove garlic, peeled
  • 2 tbsp fresh Italian parsley
  • 1/4 whole green pepper, chopped
  • 1-2 stems of broccoli, peeled and chopped
  • 1/2 medium sized zucchini, chopped
  • Toppings:
  • 3-4 fresh Roma tomatoes
  • 1/4 tsp garlic powder
  • 1/4 tsp Oregano
  • 1/4 tsp Italian seasoning
  • 2-4 tbsp of grated Parmesan or Romano cheese
  • dash of salt and pepper

Direcciones

  1. Pre-heat oven to 375 degrees. Mix all the batter ingredients together in a blender or food processor. Chop up ingredients until coarsley chopped (just a few seconds of hitting the "pulse" button). Pour mixture into each hole of cupcake tin and cover each one with a tomato slice, cheese and seasonings. Bake until puffed and golden (about 10 to 12 mins.) Add a tiny sprig of parsley on top once cooled and enjoy.
