Ahh, The Oldest graduated from high school a few weeks back and I made a few desserts-shocking, I know. His new college colors are green and gold, so I made these “green” mini key lime pies and I also made “yellow” lemon bars, that I’ll share soon…
Mini Key Lime Pies
INGREDIENTS:
- 2 packages pre-made mini graham cracker crusts (12 total)
- 3 eggs
- 1/2 cup key lime juice
- 1 (14 ounce) can sweetened condensed milk
- green food coloring to your liking, about 3 drops
- 1 pinch salt
- 1 pinch cream of tartar
- 1 cup heavy whipping cream
- 1 lime, sliced
DIRECTIONS:
Preheat oven to 325 degrees. Separate 2 of the eggs, placing the 2 egg whites into a mixing bowl. Reserve yolks in another bowl. To the yolks, add one whole egg, lime juice, sweetened condensed milk and food coloring. Whisk until smooth. With a whisk attachment, beat the egg whites with salt and cream of tartar until stiff, but not dry. Fold whites into filling mixture. Pour filling into the crusts. Bake for 8 to 10 minutes or until set. Let cool at room temperature, then freeze for 4 hours or overnight. Just before serving, whip the cream to form stiff peaks and decorate the pies with the whipped cream and lime slices.
