Mini Muffin Tin Meatloaf Recipe with Barbecue Sauce & Corn
Meatloaf becomes a favorite with the kids when baked in muffin tins and slathered in barbecue sauce. This also includes directions for freezing.
After taking the first bite of this mini muffin tin meatloaf recipe, my youngest son said, “I have no idea why so many of my friends hate meatloaf.” I’ll admit that I used to think the same way as his buddies. But these little meatloaves are different. First of all, the mini size insures even cooking so that each meatloaf is tender throughout. And the barbecue sauce mixed into the meat and brushed on top adds a kick of flavor that is a welcome change to the usual ketchup.
As with most recipes, there are ways to make this lean and healthy without sacrificing any flavor. Just a couple of quick adjustments will do the trick.
First, choose ground beef that is marked lean or extra-lean (typically 90% or 95%, respectively). You’ll be surprised at the amount of flavor and moisture that is still packed into lean meats. I have also made this recipe with ground turkey and received equally rave reviews from the family.
Second the oats and corn both add a dose of fiber. This recipe also cuts down the cholesterol slightly, compared to regular recipes, by replacing one of the eggs with an egg white.
For the freezer:
If you have leftovers, considering freezing them for a future meal. Just follow these steps:
Cool remaining meatloaves. Place them in a single layer in resealable freezer bags. Freeze for up to 3 months.
When you are ready to serve the meatloaves, thaw them completely in the refrigerator. Line a rimmed baking sheet with foil and lightly coat with cooking spray.
Bake the meatloaves at 350 degrees F for 30 minutes or until heated through.
