Ingredientes

  • 8 ounce Cream cheese
  • 2 ounce Smoked salmon
  • 1/8 tsp Lemon juice
  • 2 Tbsp. Heavy cream
  •     White pepper to taste
  • 6 Tbsp. Unsalted butter
  • 4 lrg Onions, finely minced
  •     Salt & Pepper to taste
  • 1 Tbsp. Flour
  • 3 tsp Curry pwdr (to taste)
  • 3/4 c. Heavy cream
  • 8 ounce Cream cheese
  • 4 ounce Snow crabmeat thawed/liquid removed
  • 1 x Red bell pepper, julienned into 1-inch strips
  •     Juice of 1/2 lemon
  •     Salt & Pepper to taste

Direcciones

  1. SALMON: Combine mousse ingredients in bowl of food processor and blend till smooth. Refrigerateat least 30 min. No more than an hour before serving, soften mousse with wooden spoon and put in pastry bag. Pipe mousse into puffs. (May also be piped onto cucumber rounds.) CURRIED ONIONS: Heat 3 Tbsp. butter in small skillet and saute/fry onions till transluscent. Season w/salt & pepper. Heat remaining butter in separate saucepan over med. heat.
  2. Add in flour and cook 3-4 min, stirring constantly. Add in curry pwdr and cream. Cook stirring constantly, till smooth, about 5 min. Add in onion mix. If sauce is too thick, add in a little more cream. Check seasoning.
  3. Spoon hot
  4. filling into puffs and serve immediately. CRABMEAT: Combine all filling ingredients in mixing bowl. Spoon into puffs.
