With all the holiday maddness, poor Chocolate Broccoli has fallen on the way-side. Partys, holiday get-togethers, family outings and yummy food has filled in whatever space I have in between the maintenance of my everyday life-which is packed as it is. But who is complaining? That wouldn't be me, thats for sure. I love this time of year! I will say though that I have caught myself eating a bowl of cereal for dinner on occasion these past couple weeks-Hello? talk about E-A-S-Y. Pour cereal into bowl, open milk, pour over cereal. Spoon to cereal. Spoon to mouth. Satisfaction in no time. AND, not to forget- after eating gobs of dessert and heavy meals in celebration of this time of year- cereal sounds awfully good to my belly. 

So- if cereal isn't so much your fancy where can you find light, easy, and satisfaction all in one. Well, here my friend. ;) But you already knew that (I hope!) A very amazing friend of mine hosted our monthly Supper Club and treated the group to this incredibly light and delicious meal- and I had to share it (With minimal changes! But, I change every recipe). Talk about simple! Fresh ingredients, lean protein and wholesome grains. BIG, BOLD flavor. As usual- change up the spices, flavors, or proteins as you like!

Greek Chicken

INGREDIENTS:

DIRECTIONS:

Preheat oven 350 degrees. In large oven safe sauce pan, melt the butter and olive oil, add garlic, tomatoes and oregano. Squeeze in the juice of ALL lemons, add chicken. Simmer on medium low heat for 15-20 minutes on heat. Transfer pan to preheated oven and bake for 30 minutes. Remove from oven, allow to rest. Layer over noodles. Serve!
