We are such lucky we live in a place where waters are very clean and in pristine condition hence we enjoy the best seafood our oceans and lakes have to offer, from the popular New Zealand mussels, Bluff Oysters, Snappers, Paua (Abalone) and Mount Cook Salmons we have the best in here. Now let’s focus on that salmon because I am proud of our salmon here in New Zealand. I had my fair share of travel (27 counties and counting) and on most of those places I tried some salmon, why because we love this fish and I can safely say that no one can ever beat the quality of the salmon we have here, even comparing it to the ones we got in Tsukiji Market. It is fatty, it is delicious and very fresh all of the time. I know there will be another country that has a better salmon perhaps Canada but I haven’t been there yet so I will leave my conclusion open at the moment. Once in a while we have salmon in our dining table like today we are preparing a simple dish of Miso Glazed Salmon where salmon is marinated in a combination of miso, mirin, soy sauce and ginger and grilled. One of the perfect way to flavour this delicate fish. Its tasty but not overpowering as you can still taste the full flavour of salmon and its fats, the sweet and savoury marinade just complements it very well. Miso Glazed Salmon   Save Print Prep time Cook time Total time   Serves: 3 Ingredients 3 pcs (200-250 g each) salmon steaks ¼ cup red miso ¼ cup mirin 2 tbsp rice vinegar 1 tbsp soy sauce 2 tbsp spring onions, minced 1 tbsp ginger, minced 2 tsp sesame oil chopped spring onions to garnish oil Instructions In a bowl whisk together miso, mirin, vinegar, soy sauce, spring onions, ginger and sesame oil Coat salmon with the whisked sauce, then let it marinate for an hour. Drain salmon steak of their marinade then place salmon steak on a baking paper lined baking tray and grill in your oven at 220C for 10 to 15 minutes depending on the thickness of your salmon.
