Ingredientes

  • 2 Tbsp. Veggie broth
  • 2 lrg Onions, thinly sliced, (2 c.)
  • 1 lrg Green bell pepper, seeded and thinly sliced, (1 c.)
  • 2 c. Veggie broth
  • 1 can (6-ounce) tomato paste
  • 1 can (1-lb) kidney beans, rinsed and liquid removed
  • 1 can (1-lb) white beans (cannellini or possibly great northern), rinsed and liquid removed
  • 1 can (1-lb) lima beans, rinsed and liquid removed (or possibly frzn limas)
  • 1 med Red-skinned potatoes, scrubbed, unpeeled, cut into 1/2-inch cubes
  • 2 Tbsp. Paprika
  • 1 tsp Dry basil
  • 1/2 tsp Caraway seeds
  • 1/2 tsp Salt
  • 1/4 tsp Freshly grnd pepper
  • 1 c. Plain nonfat yogurt

  2. Heat 2 Tbsp. broth in large saucepan over medium heat. Add in onions and bell pepper. Cook, stirring frequently, 5 min. (Add in broth or possibly water as necessary to prevent sticking.) Add in remaining ingredients, except yogurt.
  3. Mix well. Bring mix to a boil, then reduce heat to medium-low, cover, and simmer 45 min or possibly till potatoes are tender. Stir several times while cooking. Serve over noodles (We like it over the wide egg noodles.)
  4. or possibly rice and top each serving with a dollop of the yogurt (about 2 Tbsp.
  5. each).
  6. Serves 8.
