Mixed Berry Cobbler

Ingredientes

  • 1 cup blackberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 2 tbsp all purpose flour
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, melted
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tbsp lemon juice
  • 2 egg whites
  • 1/2 cup plain low fat yogurt

Direcciones

  1. Preheat oven to 400°F. Combine berries with flour, lemon juice, butter, sugar, vanilla, and lemon zest in a lightly buttered 7x11 in. baking dish. Toss to combine and set aside. Sift together remaining flour, baking powder and baking soda in a mixing bowl. Set aside. Combine remaining ingredients in a mixing bowl. Mix thoroughly. Stir into flour mixture until mixture is just moistened. Drop by spoonfuls on top of blackberry mixture. Bake 30 minutes, or until crust is golden and mixture is bubbling.
