Receta Mixed Grain Fiesta Salad

With more than one cook in the house, it’s no surprise when I find packages that are half empty pushed all the way in the back of my pantry. That’s why this month’s recipe redux theme really hit home with me. When I read our challenge for this month. . .

“go through your pantry, cupboards, freezer or fridge; what ‘treasures’ have you found? Pick an ingredient/spice/condiment that’s been hanging out for a while ad give it the attention it needs.”

I knew instantly that this was going to be an easy challenge, and I was sure that I would find more than one ingredient that has been hanging around. I opened up my pantry and there they were stuffed in the back. . .

two packages that were almost empty of red quinoa and another one of wheat berries.

Next, I opened up my freezer and found a half a bag of black beans and even less of some organic corn stashed away. That makes four ingredients!

I always have a variety of fresh fruits and vegetables so I thought avocados, tomatoes and onions with a spicy dressing would make an interesting combination.

And the best part . . .I didn’t even have to run to the store and I did some spring cleaning!

Mixed Grain Fiesta Salad

INSTRUCTIONS

Cook the grains according to package instructions (you can also use one type), drain and set aside to cool

In a medium bowl add the onions, corn, tomatoes, and beans

Stir in the grains

Combine the ingredients for the dressing and add to the salad mixture

Add the cilantro and mix well

If not serving right away, place in refrigerator – add the avocado just before serving
