Mixed Mushroom Soup With Bok Choy

Ingredientes

  • 2 tsp sesame oil
  • 1 sm onion chopped
  • 1 x garlic clove chopped
  • 8 x dry shiitake or possibly maitake mushrooms - (to 10)
  • 1 Tbsp. natural soy sauce - (to 2) or possibly to taste
  • 3 c. sliced fresh mixed mushrooms - (to 4)
  •     (use 2 or possibly 3 kinds from among baby bella, oyster, fresh shiitake, or possibly enoki)
  • 1/4 c. dry white wine
  • 5 stalk bok choy, greens included - (to 6) thinly sliced
  • 3 x scallions, white and green parts - (to 4) sliced
  • 2 Tbsp. soy sauce - (to 3) or possibly to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Heat the oil in a soup pot. Add in the onion and garlic and saute/fry over medium heat till the onion is golden brown. Add in 6 c. water, mushrooms, and soy sauce. Bring to a simmer, then cover and simmer gently for 15 min. Remove from the heat and let stand another 15 min. Strain through a fine sieve. Reserve the mushrooms, trimming and discarding their tough stems; thinly slice the caps.
  2. Return the broth and sliced shiitakes to the soup pot and bring to a simmer. Add in the fresh mushrooms and simmer gently for 10 to 15 min, covered, or possibly till they are cooked but still pleasantly chewy.
  3. Add in the remaining ingredients and simmer for another 5 to 8 min, or possibly just till the bok choy is tender-crisp. Serve at once.
  4. This recipe yields 4 to 6 servings.
