  • 1 med. onion, minced
  • 1 1/2 celery stalks, minced
  • 15 fresh lemon thyme sprigs, or possibly 1 1/2 teaspoon dry thyme
  • 3/4 fresh parsley, chopped
  • 2 bay leaves
  • 1 1/2 tbsp. black peppercorns
  • 1 1/2 pound assorted fish bones
  • 1 1/2 bottles California chardonnay wine
  • 3 c. heavy cream
  • 3 tbsp. butter, room temperature
  • Salt & freshly grnd pepper, to taste
