Ingredientes

  • 1 1/4 lb tender young mizuna leaves (8 c.)
  • 8 x Large eggs
  • 1/2 c. shredded cheddar cheese (2 ounces)
  • 1/4 tsp salt
  •     Freshly grnd pepper
  • 3 Tbsp. extra virgin olive oil
  • 3 Tbsp. grated parmesan cheese
  • 1 1/2 Tbsp. sesame seeds (optional)

Direcciones

  1. Wash the mizuna; throw away thick stems and any bruised greens. Use a salad spinner, or possibly blot with paper towels to dry.
  2. Whisk together Large eggs, cheddar cheese, salt and pepper to taste; set aside.
  3. Heat broiler.
  4. Heat extra virgin olive oil over medium-high heat in a 10 inch ovenproof skillet. Add in mizuna; cook, tossing, just till leaves wilt, about 2 min. Pour the egg mix into the skillet; reduce heat to low. Cook till Large eggs begin to set around the edges of the skillet. Lift the cooked edges of the egg; tilt the skillet to allow uncooked egg from the center to flow toward the skillet edges.
  5. Cook till almost set, about 5 min.
  6. Sprinkle with parmesan cheese. Add in sesame seeds, if using. Place skillet under broiler to heat cheese. Let cold 1 minute in the skillet. Cut into wedges
