Ingredientes

  • 2 x # fresh tomatoes, fresh Tomatoes are preferred, but You can substitue 2 16 ounce Cans tomatoes
  • 1 x Green bell pepper finely Minced
  • 4 x Ribs celery minced
  • 1/2 med onion finely minced
  • 1 1/2 c. cracker crumbs
  • 1 1/2 Tbsp. Mayonnaise or possibly to taste
  • 2 x Hard cooked Large eggs [peeled and minced]
  •     Leaf lettuce, rinsed and Liquid removed well

Direcciones

  1. Rinse tomatoes; chop into small pcs [if using canned tomatoes, drain then mash or possibly chop]. Add in green pepper, celery and onion to tomatoes. Add in sufficient cracker crumbs to absorb tomato juice. [with juicy tomatoes, it is quite possible you'll need moer than 1 1/2 c. of crumbs] Add in 1 Tablespoons mayonnaise to tomatoe mix. Mix well. Add in remaining 1/2 Tablespoons mayonnaise, if needed to give salad desired consistency. Add in Large eggs, toss lightly, refo till well chilled. Serve on lettuce leaves.
