“Moistest” oh yes, I just had to add that in the title, because this chicken will surprise you with how moist it is! Sometimes there’s just nothing better (or easier) than a chicken breast and a few vegetables (OK, you got me, there’s also a few pierogies in the photo)…
Moistest Baked Chicken
INGREDIENTS:
- 1/3 cup mayonnaise
- 1/4 cup stone ground mustard
- 2 teaspoons paprika
- 1/2 lemon, juiced
- salt and pepper, to taste
- 4 boneless, skinless chicken breasts
DIRECTIONS:
Preheat oven to 425 degrees. Line a baking sheet or casserole with aluminum foil. In a small bowl, mix the mayonnaise, mustard, paprika, lemon juice, salt and pepper. Arrange the breasts on the baking sheet and spread the may mixture over the tops and sides. Bake for 20-25 minutes or until juices run clear. Serve with a good helping of sauteed vegetables.
