Molasses Glazed Pork Roast With Black Pepper Dumplings

Ingredientes

  • 3 Tbsp. extra virgin olive oil
  • 1 x bone-in pork loin roast - (3 to 4 lbs)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Molasses Glaze (see below)
  • 1 x Spanish onion finely diced
  • 1 lrg carrot finely diced
  • 1 x celery stalk finely diced
  • 2 x garlic cloves finely minced
  • 1 c. dry white wine
  • 6 c. chicken stock
  • 4 sprg fresh thyme
  • 4 sprg parsley
  •     Black Pepper Dumplings (see below)
  •     Minced parsley for garnish
  • 1 1/2 c. molasses
  • 2 Tbsp. whole grain mustard
  •     Salt to taste
  • 1 c. all-purpose flour
  • 1 1/2 tsp baking pwdr
  • 1 tsp kosher salt
  • 1 Tbsp. coarsely-grnd black pepper
  • 1 Tbsp. finely-minced fresh parsley
  • 1 tsp finely-minced fresh thyme
  • 2 Tbsp. solid vegetable shortening very cool
  • 1/3 c. lowfat milk

Direcciones

  1. Preheat oven to 350 degrees.
  2. Heat oil in a large Dutch oven over high heat. Season the pork with salt and pepper and sear on all sides till golden. Transfer the pot to the oven and roast about 1 hour. Brush the pork liberally with the Molasses Glaze and continue roasting till the internal temperature reaches 145 degrees. Remove the roast to a platter, brush with more of the glaze and let rest 15 min.
  3. Remove all but 2 Tbsp. of the fat from the pan and place on top of the stove over medium heat. Add in the onions, carrots, celery, and garlic and cook till soft, about 5 to 7 min. Add in the wine, increase the heat to high, and cook till reduced by half. Add in the stock and the herbs, and bring to a boil, cook till reduced by 1/3. Reduce the heat to low and let the broth simmer.
  4. Drop the dumplings into the broth, cover, and simmer till they are puffed and cooked through, about 12 to 5 min.
  5. Molasses Glaze: Combine ingredients in a small bowl.
  6. Black Pepper Dumplings: Combine the flour, baking pwdr, salt, black pepper, parsley, and thyme in a medium mixing bowl. Using your fingers, cut the shortening into the flour mix till the mix resembles coarse crumbs. Add in the lowfat milk, stirring just till the mix is moistened. Gather the dough into a ball, knead it a few times, and cut into 12 equal pcs.
  7. This recipe yields 6 to 8 servings.
