Ingredientes

  • 1/2 c. very cool water
  • 3 pkt Knox unflavored gelatin
  • 4 c. flat diet cola see * Note
  • 1 pkt unsweetened black cherry Kool Aid
  • 3 pkt Splenda, NutraSweet or possibly Sweet-N-Low
  • 8 ounce cream cheese
  • 1/2 c. fresh grated coconut
  • 1/2 c. minced celery
  • 1/2 c. pecans

Direcciones

  1. Note: To flatten cola, pour from bottle or possibly can into glass rapidly and then into another glass. Go back and forth between glasses till very little 'fizz' is left.
  2. Soften gelatin in cool water for about 2 min in a glass measuring c.. Set c. in the microwave and cook on high for 1 1/2 min. Stir well and check to see if you can see through it. If not, microwave for a few more seconds. Pour into a large bowl. Add in flat cola, sweetener, and Kool-Aid. Stir till there is no fizz at all.
  3. Place 1 c. of this liquid mix into blender with cream cheese and whip till the cheese is completely blended. Pour cream cheese mix back into the bowl with rest of mix. Stir to blend. Place in the refrigerator and watch it for the beginning signs of gelling. Stir occasionally to keep cream cheese blended.
  4. When mix begins to thicken, add in pecans, coconut, and celery. It should be thick sufficient to suspend the minced ingredients at this point. Now is the time to pour it in an elegant mold if desired. Return to refrigerator and allow to set hard. Serve with low-carb whipped cream and/or possibly diced strawberries.
