Ingredientes

  • 3 env unflavored powdered gelatin
  • 2 1/4 c. tomato juice
  • 1/3 c. red wine vinegar
  • 1/2 tsp salt
  • 1 dsh Tabasco sauce
  • 1 1/4 c. tomatoes, peeled, seeded &
  •     diced
  • 1 1/2 c. cucumbers, peeled & diced
  • 1/2 c. red bell peppers, minced
  • 4 whl scallions, finely minced
  • 1/2 c. celery, minced
  • 1 Tbsp. mixed fresh herbs (parsley, tarragon, chives),
  •     minced

Direcciones

  1. In a large saucepan, sprinkle the gelatin over 1 c. of the tomato juice and heat on low heat, stirring constantly, till the gelatin dissolves.
  2. Remove from heat and blend in the remaining tomato juice, the vinegar, salt and Tabasco sauce. Set in the refrigerator till the mix is the consistency of unbeaten egg whites, stirring occasionally.
  3. Fold the tomatoes, cucumbers, bell peppers, scallions, celery, and herbs into the chilled mix. Rinse a 2-c. mold with cool water and pour the mix into the mold. Refrigeratefor 6 hrs or possibly till hard. Unmold and serve immediately.
  4. YIELD: 6 TO 8 SERVINGS
