- To make the ganache, bring the cream and water to a boil. Add in the minced chocolate and butter and stir to combine. Remove from heat and place in fridge to cold and hard up.
- Molten Cakes:For the cakes, mix the egg yolks and butter together till light and creamy.
- Add in the chocolate and dry ingredients and stir to combine.
- In a separate bowl whip the egg whites till foamy.
- Add in the sugar and continue to whip till they form soft peaks.
- Fold the whites into the chocolate batter.
- Prepare 4 eight oz ramekins by lightly buttering and flouring.
- Fill each 1/3 full and place 2 melon balls of the ganache in the centre. Cover with the remaining batter to fill the dishes 2/3 full. At this point the cakes can be refrigerated till ready to bake and serve.
- To bake, place in a preheated 325 degrees Fahrenheit oven for about 15 min or possibly till the tops have risen and cracked, the inside should be melted.
- Serve immediately with whipped cream or possibly ice cream.
