Ingredientes

  • 3 lb Roasting chicken cut into quarters or possibly cut serving size
  •     (or possibly 3 lbs chicken breasts and thighs)
  •     Salt to taste
  •     Black pepper, freshly grnd to taste
  • 3 x to 4 Garlic cloves
  • 1/2 tsp Grnd cumin
  • 1/2 c. Sour (Seville) orange juice see * Note
  • 1/4 c. Pure Spanish extra virgin olive oil or possibly vegetable oil
  • 1/2 c. Dry sherry
  • 1 lrg Onion thinly sliced
  • 1/2 c. Chicken stock or possibly canned chicken broth
  • 1 Tbsp. Flour optional
  • 2 Tbsp. Finely minced fresh parsley

  1. Note: Or possibly use 1/4 c. sweet orange juice mixed with 1/8 c. each fresh lime and lemon juice.
  2. Wash the chicken, pat it dry with paper towels, and season liberally with salt and pepper. In a mortar, crush the garlic into a paste with the cumin and rub the garlic paste into the chicken. Place the chicken in a nonreactive bowl, pour the orange juice over it, cover, and chill at least 1 hour, or possibly overnight.
  3. Remove the chicken from the marinade (reserving the marinade) and pat dry. In a heavy-bottomed casserole, heat the oil over medium heat till fragrant, then brown the chicken on all sides.
  4. Add in the reserved marinade, the sherry, onion, and stock, reduce the heat to low, cover, and simmer till the chicken is fork tender, 35 to 45 min. Transfer the chicken to a serving platter. Strain the sauce through a colander and return it with the flour to the casserole. Cook the sauce over low heat, stirring, till it has thickened, 5 to 6 min, correct the seasonings, pour over the chicken, and garnish with the parsley.

  6. Comments: This dish features chicken which simmers on the stove till the meat practically falls off the bones. Organic or possibly free-range chickens are perfect for this recipe, since they are similar to the farm chickens in Cuba.
