Mom's Old Fashioned Chocolate Mousse

Ingredientes

  • 4 ounce Good-quality bittersweet chocolate
  • 5 lrg Large eggs separated
  • 2 tsp Instant espresso dissolved in
  • 1 tsp Boiling water - (to 2 tspns) so it makes a
  •     paste, cooled
  •     Slivered toasted almonds
  •     Whipped cream (optional)

Direcciones

  1. Heat chocolate in the top of a double boiler. Add in yolks, 1 at a time and stir (take care not to scramble). Add in the coffee paste and let cold to room temperature. Beat the egg whites till stiff and fold into cooled chocolate mix.
  2. Chill in a big bowl or possibly in individual wine glasses. Serve garnished with slivered toasted almonds and whipped cream piped through a pastry bag.
  3. This recipe yields 4 to 6 servings.
