You won’t believe how tender Mom’s Pot Roast becomes after it slow cooked.

2.5 pounds Chuck Roast 3 Tablespoons Thick-In-Up (Dixie's Diner) 2 Tablespoons olive oil 1 shallot, sliced 1 cup Beef Stock ½ teaspoon salt ¼ teaspoon pepper 1 teaspoon thyme 1 cup carrots, sliced 12 ounces potatoes onion soup mix (packet) (I used Lipton) ½ cup red wine 1 can Golden Mushroom Soup (I used Campbell's)

Sprinkle the roast with the salt and pepper Dredge in the flour. In a skillet set to medium high heat. add the oil. Brown the meat on all sides. Place the roast in the slow cooker, set aside. In the same skillet saute the shallots about 5 minutes, add the dry soup mix and toast the seasoning. Add to the to of the roast. Add the potatoes around the roast. Top with the sliced carrots Add the wine and the beef stock Add the thyme Smother the roast with the mushroom soup. Set the slow cooker to high for 6 hours 3.2.2807

She is what some may want to epitomize. Not only as a human being, but also in the kitchen.

When it comes to cooking and even baking, she never uses a measuring spoon. Her meals are always so delicious. Every single stinking time too.

But ask her how to make something and she will just say “a pinch of this” or “a handful of that.” I love that about her.

What is rather comical, to a certain extent, is what her and dad call “newfangled”. It took what seemed like a lifetime just to get her to use the dishwasher.

Mom’s pot roast was always so delicious and tender. So I took her recipe and put it in this newfangled device. It’s called a slow cooker. Mom doesn’t like them. Remember, she thinks if left alone your house could burn down.

What makes mom’s pot roast extra special is that my whole family loves it as much as I do. And that, my friends, is music to my ears.
