Mom put together a type of Tex-Mex casserole with pork chops that is just out of this world good.  It is so simple yet so tasty so give her Tex-Mex Pork Chop Casserole a try and let us know what you think. Ingredients: 2 tablespoons oil 4-6 pork chops 1 large sweet onion 1 green pepper 1 teaspoon cumin 1 teaspoon oregano 1/2 teaspoon each salt and pepper to taste 2 cups corn 1/2 cup salsa 14 ounce can of crushed tomatoes Directions Preheat oven to 350°F Add oil to skillet and then brown pork chops in a skillet over medium high heat While pork chops are browning cut onions and peppers in 1/2 slices Transfer  pork chops to another dish/skillet and reserve the juices in skillet. Reduce heat to medium and scrap the skillet of all the pieces of chops. Add the onions and peppers to skillet and sauté for 2-3 minutes Add your seasonings to pan and stir to combine Add salsa, corn and crushed tomatoes, stir to combine and sauté another 2-3 minutes.
