%20and%20probably%20didn't%20have%20an%20ingredient%20or%20two.%20And%20then,%20Mom%20gave%20me%20some%20smoked%20paprika,%20so%20I've%20strayed%20a%20bit%20from%20that%20original%20recipe.%20That%20happens%20a%20lot%20around%20here%20-%20it's%20genetic.%20(Right,%20Mom?)%3C/p%3E%3Cp%3EHere%20is%20almost%20everything%20you%20need.%20I%20forgot%20to%20put%20the%20salt%20canister%20in%20the%20photo.%3C/p%3E%3Cp%3ESo%20when%20you%20look%20at%20that%20pile%20of%20herbs%20and%20spices,%20the%20idea%20of%20mixing%20up%20a%20big%20batch%20makes%20a%20lot%20of%20sense,%20doesn't%20it?%20Because%20then,%20you%20get%20all%20this%20stuff%20out%20once,%20make%20your%20blend,%20and%20then%20just%20get%20out%20one%20little%20container%20each%20time%20after%20that.%3C/p%3E%3Cp%3EHere%20is%20the%20recipe:%3C/p%3E%3Cp%3EMix%20it%20all%20up.%20Put%20it%20in%20a%20container%20and%20label.%20That's%20it!%20The%20first%20time%20you%20make%20it,%20you%20might%20want%20to%20use%20lower%20case%20t's%20-%20teaspoons%20-%20instead%20of%20capital%20T's%20(tablespoons).%20That%20will%20give%20you%20enough%20to%20coat%202-3%20chickens%20and%20see%20if%20you%20like%20it.%20Once%20you%20decide%20that%20you%20like%20it,%20you%20can%20make%20the%20big%20batch!%20I%20store%20it%20in%20a%20previously%20emptied%20spice%20container,%20right%20in%20with%20my%20spices.%20I%20should%20show%20you%20my%20spice%20cabinet%20one%20of%20these%20days!%3C/p%3E%3Cp%3EI%20only%20buy%20whole%20chickens,%20because%20they%20cost%20a%20lot%20less%20than%20parts.%20I%20almost%20always%20cut%20them%20up%20(because%20they%20cook%20faster%20and%20are%20easier%20to%20serve),%20which%20give%20me%20plenty%20of%20chicken%20cutting%20practice.%20Either%20is%20fine%20for%20this%20blend,%20though.%20If%20you%20have%20a%20whole%20bird,%20rinse%20it%20and%20dry%20it,%20sprinkle%20it%20inside%20and%20out%20and%20roast%20accordingly%20(please,%20at%20least%20350%20degrees%20for%20safety).%3C/p%3E%3Cp%3EI%20take%20the%20speedy%20route.%20I%20spray%20my%20glass%20pan%20with%20nonstick%20spray,%20then%20sprinkle%20in%20a%20layer%20of%20Herbed%20Chicken%20Goodness.%20Not%20that%20you%20need%20to%20see%20a%20pan%20with%20nonstick%20spray%20and%20herbs%20in%20it,%20but%20since%20I%20was%20goofy%20enough%20to%20take%20the%20photo...%3C/p%3E%3Cp%3E...there%20you%20go.%20Next,%20I%20put%20my%20cut-up%20chicken%20pieces%20in%20the%20pan.%20I%20tell%20myself%20there%20is%20an%20art%20to%20this%20-%20put%20the%20wings%20in%20the%20middle%20because%20they%20are%20little%20and%20cook%20faster,%20put%20the%20thicker%20pieces%20around%20the%20edges%20so%20they%20get%20more%20heat,%20put%20the%20thick%20part%20of%20the%20leg%20'out'%20and%20the%20handle%20part%20'in'%20-%20that%20way,%20it%20all%20evens%20out.%20That%20is%20my%20theory,%20and%20it%20works%20for%20me.%20Oh,%20and%20the%20other%20thing%20I%20do%20is%20cut%20breast%20pieces%20in%20half,%20cross-wise.%20They%20are%20just%20so,%20so%20big,%20and%20no%20one%20here%20will%20eat%20a%20whole%20one,%20so%20this%20way%20we%20get%20more%20pieces%20that%20are%20similar%20in%20size,%20which%20I%20think%20helps%20with%20cooking%20time%20and%20portions.%20It's%20not%20a%20standard%20cut%20-%20there%20is%20not%20an%20easy%20joint%20there%20or%20a%20specific%20place,%20so%20it%20means%20a%20lot%20of%20fussing%20(and%20knife%20sharpening),%20but%20that's%20why%20in%20this%20next%20picture,%20the%20pieces%20look%20'different'.%3C/p%3E%3Cp%3EAnd%20as%20you%20can%20see,%20once%20I%20put%20the%20pieces%20in%20there,%20I%20sprinkle%20them%20with%20more%20Herbed%20Chicken%20Goodness.%20I%20cover%20the%20whole%20thing%20during%20the%20first%20part%20of%20baking%20(a%20cookie%20sheet%20will%20save%20foil%20and%20works%20well)%20and%20bake%20at%20375%20for%20about%2030%20minutes,%20then%20take%20off%20the%20cookie%20sheet%20so%20the%20pieces%20can%20brown%20a%20bit%20-%20this%20takes%20another%2015%20minutes%20or%20so.%20(And%20since%20the%20oven%20is%20on,%20why%20not%20pop%20in%20a%20pan%20of%20corn%20bread?)%20I%20use%20a%20thermometer%20to%20check%20for%20safe%20temps,%20and%20then,%20we%20eat.%3C/p%3E%3Cp%3EApologies,%20but%20I%20neglected%20to%20take%20a%20photo%20of%20the%20golden-brown,%20herb-encrusted%20final%20product.%20We%20were%20hungry.%3C/p%3E%3Cp%3EThat%20is%20all%20I%20do,%20and%20the%20chicken%20is%20moist%20and%20tasty%20every%20time.%20If%20you%20don't%20eat%20the%20skin,%20you%20can%20lift%20it%20up%20and%20put%20the%20herbs%20underneath%20the%20skin.%20I%20do%20that%20sometimes,%20because%20the%20skin%20will%20keep%20the%20chicken%20from%20getting%20dry.%20There%20is%20usually%20some%20really%20yummy%20'juice'%20in%20the%20pan%20that%20is%20a%20great%20start%20for%20chicken%20soup,%20too!%3C/p%3E%3Cp%3EHappy%20Cooking!%3C/p%3E%3Cp%3E-Laura%20at%20TenThingsFarm%3C/p%3E){kind=link}
