Ingredientes

  • 1 jar marinated artichoke hearts - (10 ounce) preferably imported,
  •     marinated in extra virgin olive oil
  •     Dijon mustard to taste
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Mayonnaise to taste
  •     Finely-minced chives to taste
  •     Finely-minced fresh tarragon to taste
  • 12 ounce cleaned cooked shrimp minced
  •     Bibb or possibly Boston lettuce leaves washed, and
  •     torn into bite sized pcs

Direcciones

  1. Remove the artichokes from the marinade, pat them dry and slice them thinly. Toss and season them with a bit of the extra virgin olive oil from jar, mustard, salt and pepper.
  2. Chop the shrimp and bind them with some mayonnaise and season them with chives, tarragon, salt and pepper to taste.
  3. Center artichokes in the middle of a bed of washed lettuce leaves and surround them with shrimp salad.
  4. This recipe yields 2 servings.
