Ingredientes

  • 1 lb Tripe
  • 2 x Pigs' Feet, Thoroughly Wash
  • 1 quart Water
  • 1 lrg Onion
  • 1 x Bay Leaf
  • 1 sprg Parsley
  • 2 x Cloves Garlic
  • 8 x Peppercorns
  •     Salt
  • 2 Tbsp. Extra virgin olive oil
  • 8 ounce Tomato Sauce
  • 1/4 lb Minced Uncooked Ham
  • 1 c. White Table Wine
  • 1 Tbsp. Capers Or possibly To Taste
  • 3 ounce Pimento Stuffed Olives

Direcciones

  1. Place tripe, pigs' feet, water, onion, bay leaf, parsley, garlic, peppercorns, and salt in kettle. Cover and simmer till tender. Cold.
  2. Remove meat from broth, strain and reserve 2 c. of broth. Remove bones from pigs' feet. Coarsely chop pigs' feet and tripe. Set aside. Wilt onion in oil, add in tomato sauce, cook for 5 min. Add in broth, ham, tripe, pigs' feet, and wine. Adjust seasoning, simmer a few min longer, then add in capers and olives.
