It's only 8 am on a Monday morning, and I can already tell this week is going to be crazy busy. I've got so many projects going on that I'm having a hard time keeping track of them. I need to do some trim work in the living room. But first I have to learn how to use my new toy. I'm working on furniture and decorations for the living room. And sewing some cute bubble skirts and hair clips for my Etsy store. Whewww. Plus I am working on a tutorial. Yep, I've had so many questions about my rosette pillow that I decided I'd better get it in gear and do a step-by-step.

But for today, I'm sharing a recipe. And it's a main dish even. I feel like it's been forever since I shared a dinner recipe. We eat pretty basic in the summer. Easy meals, and lots of BBQ's. Not a lot to share in the main dish department. But I tried this a few weeks ago and the family loved it. It's already made it's second appearance at our table. I found the recipe over at Mmm Cafe. It is a knock-off recipe for Chili's Monterey Chicken. I love restaurant knock-off recipes, don't you? Saves so much money! I've never actually had the Monterey Chicken at Chili's, so I can't attest to how authentic it is. But I can attest that it is delicious!

Cook the bacon till crispy. Bake chicken at 350 for 20-30 minutes or till juices run clear. (If you pound it thin, it will bake faster.) Smoother both sides of the chicken with BBQ sauce. Bake 3-5 more minutes. Top with bacon and grated cheese and broil for 30-60 seconds or till cheese melts. Garnish with tomatoes and green onions.
