Ingredientes

  • 1/4 c. bacon grease
  • 1 lb sliced okra
  • 1/4 c. butter
  • 1/2 c. flour
  • 1 lrg onion minced
  • 1 x green bell pepper minced
  • 2 x celery ribs minced
  • 7 c. warm water
  •     Cubed breast meat from 5 moorhens
  • 1 lb smoked sausage cut bite size
  • 1 bn green onions minced
  • 1 x garlic clove chopped
  • 1 x bay leaf
  • 1/4 tsp thyme
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Worcestershire sauce to taste
  •     Tabasco sauce to taste

Direcciones

  1. Cook okra in 2 Tbsp. bacon grease and set aside.
  2. Make a roux by heating the remaining bacon grease and the butter in a large Dutch oven; stir in the flour. Cook over medium heat, stirring constantly, till roux is light brown. Add in onion, bell pepper and celery, and cook till onion is clear.
  3. Add in three c. warm water, moorhen meat, sausage, okra, green onions, garlic, bay leaf, thyme, salt and pepper. Cook over low heat 2 hrs.
  4. Add in four more c. warm water, and Worcestershire sauce and Tabasco to taste. Cook over low heat 2 hrs.
  5. Add in four more c. warm water, and Worcestershire sauce and Tabasco to taste. Cook over low heat 2 more hrs. Serve over cooked rice.
