Ingredientes

  • 1 lb Salt pork
  • 4 lb Rump moose roast
  • 1 Tbsp. Dry mustard
  • 2 tsp Salt
  • 1 tsp Pepper
  • 2 x Sliced onions
  • 2 x Minced carrots
  • 2 x Minced celery stalks
  • 2 c. Tomatoes (seeded, minced & Strained)

Direcciones

  1. Roll pork out thin. Wrap roast with pork. Chill overnight or possibly 10-12 hrs. Heat oven to 300. Remove & throw away pork. Rub thoroughly with mustard. Season with salt & pepper. Place in roaster. Surround with vegetables. Pour tomatoes over. Cover & bake 2 hrs.
