.%20It%20is%20a%20hearty%20stew%20featuring%20either%20beef%20or%20lamb,%20chickpeas,%20lentils,%20pasta,%20and%20green%20beans%20in%20a%20flavorful%20broth.%3C/p%3E%3Cp%3EWhen%20I%20look%20at%20recipes,%20I'm%20as%20interested%20in%20the%20spice%20palette%20as%20I%20am%20the%20main%20ingredients.%20The%20Moroccan%20use%20of%20cinnamon,%20saffron%20and%20cumin%20won%20me%20over%20and%20I%20spent%20time%20looking%20for%20more%20recipes%20to%20try.%20I%20really%20appreciate%20the%20fact%20that%20Moroccan%20dishes%20are%20committed%20to%20ensuring%20that%20the%20spices%20blend%20with%20the%20main%20ingredient,%20through%20long,%20slow%20cooking.%3C/p%3E%3Cp%3EIn%20my%20recipe%20search,%20I%20came%20across%20a%20dish%20that%20is%20very%20popular%20in%20Morocco:%20chicken%20with%20preserved%20lemon%20and%20olives.%20My%20interest%20was%20piqued%20by%20the%20use%20of%20preserved%20lemon,%20which%20I%20had%20never%20used%20before.%20And%20there's%20a%20reason%20for%20that;%20preserved%20lemon%20are%20not%20readily%20found%20in%20most%20supermarkets.%20That%20was%20fine%20by%20me%20as%20I%20knew%20that%20there%20had%20to%20be%20a%20recipe%20out%20there.%20And%20there%20was!%20I%20was%20pleased%20to%20discover%20that%20preserved%20lemon%20was%20relatively%20easy%20to%20make%20(http://inthekitchenwitheva-eva.blogspot.com/2011/11/preserved-lemons.html).%20The%20only%20drawback%20was%20that%20I%20would%20have%20to%20wait%20three%20weeks%20to%20use%20them%20to%20make%20the%20chicken%20dish.%20It%20takes%20that%20long%20for%20the%20salt%20and%20lemon/vinegar%20to%20infuse%20into%20the%20lemons%20and%20tenderize%20the%20rind.%20This%20was%20my%20second%20post%20on%20Moroccan%20cooking.%3C/p%3E%3Cp%3EThree%20weeks%20passed%20and%20by%20the%20time%20the%20preserved%20lemons%20were%20ready%20for%20use,%20I%20had%20spent%20considerable%20time%20reviewing%20a%20wide%20range%20of%20recipes%20for%20Moroccan%20chicken%20with%20preserved%20lemon%20and%20olives.%20I%20chose%20one%20that%20I%20found%20online%20(closetcooking.com).%3C/p%3E%3Cp%3EI%20did%20not%20have%20harissa%20(a%20Moroccan%20spice%20paste%20made%20from%20dried%20chili%20peppers,%20garlic%20and%20spices))%20on%20hand%20and%20had%20to%20make%20it.%20The%20end%20result%20made%20the%20effort%20worthwhile,%20although%20it%20was%20somewhat%20time-consuming.%3C/p%3E%3Cp%3EI%20recommend%20doubling%20the%20recipe%20so%20that%20you%20have%20a%20good%20amount%20on%20hand%20for%20other%20dishes%20that%20require%20harissa.%20Be%20forewarned%20that%20using%20dried%20red%20chilies%20--even%20if%20you%20are%20careful%20to%20remove%20all%20the%20pith%20and%20seeds%20--%20will%20still%20yield%20a%20very%20fiery%20harissa.%20If%20you%20can't%20take%20too%20much%20heat,%20consider%20using%20milder%20chilies.%20The%20point%20is%20for%20you%20to%20be%20able%20to%20enjoy%20the%20dish%20and%20not%20have%20to%20focus%20on%20the%20sensation%20of%20heat%20permeating%20through%20your%20mouth.%20I%20love%20heat%20so%20I%20used%20Southeast%20Asian%20dried%20red%20chilies.%20Not%20for%20the%20faint%20of%20heart!%3C/p%3E%3Cp%3EI%20had%20all%20the%20spices%20on%20hand%20for%20the%20harissa%20except%20for%20caraway%20seeds.%20They%20were%20on%20the%20expensive%20side%20-%20$5.99%20for%20a%20very%20small%20bottle.%20I%20ground%20them%20in%20the%20coffee%20grinder%20before%20adding%20them%20to%20the%20rest%20of%20the%20mixture.%20If%20you%20want%20to%20release%20more%20flavor,%20you%20could%20heat%20the%20seeds%20over%20a%20low%20flame%20in%20a%20non-stick%20pan.%20Let%20them%20cool%20before%20grinding%20them.%3C/p%3E%3Cp%3EThe%20spice%20palette%20for%20the%20harissa%20is%20ground%20coriander,%20caraway%20seeds%20and%20cumin.%3C/p%3E%3Cp%3EHarissa%20(recipe%20taken%20from%20mideastfood.about.com)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EMix%20the%20paprika,%20cayenne%20pepper,%20cumin,%20turmeric,%20cinnamon,%20saffron,%20salt%20and%20pepper%3C/p%3E%3Cp%3Eand%20rub%20it%20into%20the%20chicken.%3C/p%3E%3Cp%3EMake%20sure%20you%20clean%20the%20chicken%20well.%20I%20use%20either%20lemon%20juice%20or%20white%20vinegar.%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20large%20pan.%3C/p%3E%3Cp%3EAdd%20the%20chicken%20and%20brown%20on%20all%20sides%20and%20set%20aside.%3C/p%3E%3Cp%3ELet%20the%20chicken%20darken%20to%20a%20beautiful%20spice-infused%20brown.%3C/p%3E%3Cp%3ERemove%20the%20browned%20chicken%20from%20the%20pot%20and%20set%20aside.%3C/p%3E%3Cp%3EAdd%20the%20onion,%20and%20saute%20for%203%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20garlic%20and%20ginger%20and%20saute%20until%20fragrant,%20about%20a%20minute.%20I%20used%20a%20bit%20more%20ginger%20because%20I%20love%20it%20so%20much!%3C/p%3E%3Cp%3EAdd%20the%20water%20(I%20recommend%20using%20chicken%20stock%20as%20it's%20more%20flavorful)%3C/p%3E%3Cp%3Eand%20chicken.%3C/p%3E%3Cp%3ECover%20and%20simmer%20for%2015%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20preserved%20lemon%20(Remove%20the%20flesh%20and%20pith%20and%20slice%20the%20peel%20thinly.%20I%20actually%20used%20a%20bit%20of%20the%20flesh,%20which%20was%20a%20great%20combination%20of%20salt%20and%20lemon.)%3C/p%3E%3Cp%3EThe%20preserved%20lemon%20really%20has%20an%20elegant%20look!%20I%20had%20to%20stop%20myself%20from%20eating%20all%20the%20slices.%3C/p%3E%3Cp%3EAdd%20the%20olives%20(I%20used%20a%20combination%20of%20Spanish%20and%20nicoise%20olives).%3C/p%3E%3Cp%3EAdd%20the%20harissa%3C/p%3E%3Cp%3Eand%20honey%3C/p%3E%3Cp%3Eand%20simmer,%20covered,%20for%2025%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20mix%20in%20the%20parsley%20and%20cilantro.%3C/p%3E){kind=link}
