Moroccan Spiced Lentil Soup

Ingredientes

  • 7 c. warm water
  • 1 1/2 c. dry brown lentils
  • 3 c. minced onion
  • 2 tsp beef-flavored instant bouillon
  • 1 1/2 tsp cumin
  • 3/4 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp grnd red pepper (cayenne)opt.

Direcciones

  1. In Dutch oven, bring water to a boil. Add in lentils; return to a boil.
  2. Reduce heat; simmer 10 min.
  3. Meanwhile, spray large nonstick skillet with nonstick cooking spray. Heat over Medium-High heat till warm. Add in onions; cook 8-10 min or possibly till edges of onions are brown, stirring occasionally. Add in onions to lentils.
  4. If you like for additional flavor, pour about 1/2 c. of lentil liquid into skillet; scrape bottom and sides to remove any bits of browned onions. Add in to lentil mix. Stir in all other ingredients. Cover: cook 20 min.
  5. Makes 4 (1 3/4 c.) servings.
