Ingredientes

  • 1 lb Lamb, minced in 1" cubes leanest cut possible
  • 2 c. Onions, minced
  • 1 x Clove Garlic, chopped
  • 1/2 c. Water
  • 2 x Garbanzo beans,15z liquid removed
  • 2 x No-Salt Tomatoes,14oz cut up
  • 1/3 c. Tomato Paste
  • 1/3 c. Light Raisins
  • 1/4 c. Slivered Almonds
  • 1/2 tsp Black Pepper, fresh grnd
  • 1/2 tsp Thyme, dry, crushed
  • 1/4 tsp Salt
  • 1/4 tsp Cinnamon, grnd
  • 1/4 tsp Allspice, grnd
  • 1/8 tsp Red Pepper, Cayenne
  • 1/2 c. Chicken Stock
  • 4 c. Couscous, warm, cooked, prepared without fat
  •     Cilantro leaves

Direcciones

  1. Lightly spray a warm 12 inch skillet with release spray, add in lamb and brown quickly on medium high heat, till the edges of the lamb cubes are a little crusty.
  2. Drain most of grease from pan.
  3. Add in, onions, garlic and water; bring to boiling, cook over medium heat till the onions are translucent/soft.
  4. Add in 3/4 c. Garbanzo beans, undrained-tomatoes, tomato paste, raisins, almonds, black pepper, thyme, salt, cinnamon, allspice, red pepper and stock. Bring to boiling. Reduce heat and simmer, covered, 1 1/2 hrs or possibly till lamb is very tender. Add in remaining garbanzo beans and simmer for 10 min or possibly until desired consistency. Serve over warm couscous.
