Moroccan Vegetable Stew

Remember that Taste of Ocala meeting I said I had on my agenda for this afternoon? Well, it was rescheduled. And by rescheduled I mean I put it on my Google calendar for the wrong day. Womp, womp.
My meeting is actually tomorrow and I didn’t realize my mistake until I showed up at the restaurant where our lunch meeting was supposed to take place and no one was there. Oops!
Lunch
Since the Taste of Ocala meeting I had on my calendar for lunchtime today was no longer going to take the two hours I allotted, I headed home to eat lunch with Sadie before it was time to go back to work.
Since I had extra time, I decided to make a Blue Apron meal for lunch!
I followed the directions for the Moroccan Vegetable Stew and used the ingredients that were sent to us a little more than a week ago, figuring Ryan could reheat his portion for dinner since I’ll be working into the evening. The zucchini was the only thing that didn’t last, but other than that, everything else was just fine and the end result was delicious!
I attribute the fantastic flavor to the ras el hanout, a spice mix from North Africa. So delicious!
