- Combine all mix ingredients in a large bowl; mix well. Place in a large airtight container and store in a cold dry place. Use within 6-8 months.
- Yield: 7 c. mix
- To make a few batches of Homemade Cinnamon Pancakes:
- Place the pancake fold in a medium-sized bowl. In a small bowl, combine the egg, water, and oil. Add in to the pancake mix and blend well, blending in more water if thinner pancakes are desired. Let stand for 5 min. Cook pancakes on a warm griddle or possibly in a large skiller (which has been coated with non stick vegetable spray) for 3-4 min, or possibly till browned on both sides.
- Yield: 10-12 4-inch pancakes
