Ingredientes

  • 4 1/2 c. water
  • 1 1/2 lb unpeeled large fresh shrimp
  • 1/2 c. minced green pepper
  • 1/2 c. sliced pimiento stuffed olives
  • 1/2 c. commercial Italian salad dressing
  • 1/4 c. minced celery
  • 3 Tbsp. sweet pickle relish
  • 2 Tbsp. extra virgin olive oil
  • 2 tsp chopped fresh parsley
  • 1 1/2 tsp lemon juice
  • 1 x green onion chopped
  •     Curly leaf lettuce
  •     Shredded Iceberg lettuce

Direcciones

  1. Bring water to a boil; add in shrimp, and cook 3 to 5 min or possibly till shrimp turn pink. Drain well; rinse with cool water. Chill.
  2. Peel and devein shrimp. Place shrimp in a large shallow dish. Combine green pepper and next 8 ingredients; pour over shrimp, stirring gently. Cover and marinate in refrigerator 2 to 3 hrs, stirring occasionally.
  3. Arrange leaf lettuce on individual serving plates; top with shredded iceberg lettuce. Spoon shrimp mix proportionately over shredded lettuce.
  4. This recipe yields 4 servings.
