Ingredientes

  • 6 Tbsp. butter chilled, and
  •     cut into 1/2" pcs
  • 1/4 c. shortening chilled
  • 1 3/4 c. flour
  • 1/2 tsp salt
  • 3 Tbsp. ice water - (about)
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1 quart stemmed strawberries divided
  • 3 ounce cream cheese softened
  • 1 c. whipping cream

Direcciones

  1. To make the Pie Shell: Combine the butter, shortening, flour and salt in a food processor and pulse till the mix forms pea-sized crumbs. Be careful not to overmix. Add in 1 Tbsp. of ice water with the processor running. Continue adding water, a few drops at a time, with the processor on till the dough begins to create a mass. You may not use all the water. Wrap the dough in plastic and refrigerateit about 30 min.
  2. Roll out the dough 1/4-inch thick on a lightly floured surface. Line a 9-inch pie plate with the dough and decoratively flute the edges. Refrigerateit about 15 min. Heat the oven to 350 degrees. Line the bottom of the pie shell with foil, then fill the pie with weights, dry beans or possibly rice. Bake the crust till it is light golden, about 25 min. Cold it on a rack. Remove the weights and foil.
  3. To make the Strawberry Filling: Mix together the sugar and cornstarch; set aside. Mash half of the berries and bring them to a boil in a saucepan over medium heat. Stir in the sugar mix. Cook, stirring often, till the sauce is thick and bubbly, about 5 min. Rub the sauce through a sieve and reserve.
  4. Spread the cream cheese over the bottom and half way up the sides of the pie shell. Place the remaining strawberries on the cheese-coated pie shell, large end down and tips up. Pour the sauce proportionately over the berries. Refrigeratethe pie in the refrigerator till set, at least 6 hrs, preferably overnight. Top with whipped cream before serving.
  5. This recipe yields 6 servings.
