Muesli Applesauce Muffins
First of all, I want to Thank Lisa from Flour Me With Love for featuring my Angel Food Candy at her Christmas in July Party on Mix it up Monday's! My recipe for Angel Food candy has been in my family for many years. My Grandma made it every Holiday Season, along with her Famous Fudge:) Angel Food Candy and Turtle Candy are family favorites~ Thank-you Lisa for this weeks "Spotlight" It is always an honor to be featured on Mix it up Monday's:) Now on to the recipe~
- These yummy muffins are made with Muesli Cereal~ They are delicious and good for you:) Enjoy them with a drizzle of honey~
- Muesli Applesauce Muffins
- 1 cup applesauce
- 1/3 cup vegetable oil
- 2/3 cup sugar
- 1 egg
- 1/2 cup apple juice or water
- 1 1/2 cups flour
- 1 t baking soda
- 1/2 t ground cinnamon
- 1/2 t ground allspice
- 1/2 t salt
- 1 1/4 cups Muesli cereal
- 1 cup dried fruit, (raisins, figs, dates, cranberries, cherries, or blueberries)
Preheat oven to 375. Grease 12- cup muffin tin.
In a large bowl with wire whisk, beat the applesauce, oil, sugar, egg and juice or water together for 2 minutes.
In a medium bowl combine flour, baking soda, cinnamon, allspice, salt and Musli cereal. Add the dry ingredients to the applesauce mixture. Add dried fruit of your choice. Stir just until combined. Spoon batter into the prepared muffin tin, filling each cup 3/4 cup full. Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and spring back when touched. Remove from pans immediately to cool on wire rack.
