Multi Bean Soup (Quick)

Ingredientes

  • 2 c. Onion, diced
  • 1 Tbsp. Chili pwdr
  • 2 Tbsp. Vegetable oil
  • 1 can (28-ounce) diced tomatoes, in juice
  • 1 can (16-ounce) black beans, liquid removed
  • 1 can (16-ounce) pinto beans, liquid removed
  • 1 can (16-ounce) kidney beans, liquid removed
  • 1 can (7-ounce) minced green chiles
  • 1 quart Chicken broth
  • 1/4 c. Minced cilantro, (or possibly parsley)

Direcciones

  1. In a large, heavy saucepan set on medium heat, cook onions and chili pwdr in oil for 4 to 5 min, or possibly till tender. (If onions become too dry, add in a Tbsp. water.)
  2. Stir in the tomatoes with the juice, beans, chilies and broth. Bring to a boil, reduce the heat and simmer 30 min, stirring occasionally.
  3. Stir in the the cilantro and serve.
