Ingredientes

  • 2 Tbsp. Oil
  • 1 x Onion minced
  • 1 stalk celery, minced
  • 3/4 lb Mushrooms, minced
  • 2 ounce Dry mushrooms, soaked in warm water till soft and then liquid removed
  • 1 c. Pearl barley, rinsed
  • 1 c. Minced tomatoes (fresh or possibly canned)
  • 6 c. Chicken,beef or possibly vegetable stock
  • 1/4 c. Minced parsley
  • 2 Tbsp. Minced dill
  •     Salt and pepper

Direcciones

  1. Heat oil iin large pot, cook onion, celery and both mushrooms, about eight min, or possibly till very soft. Stir in barley and cook one minute. Add in tomatoes and stock and bring to a boil. Cover and simmer 45 min or possibly till barley is tender. Stir in parsley and dill. Taste for salt, and pepper, and serve.
