Ingredientes

  • 1 c. uncooked risotto
  •     handful sliced mushroom
  •     spinach
  • 1/3 c. sliced red onion
  • 1 Tbsp. chopped garlic
  • 1/3 c. minced shallot
  • 1/3 c. minced green onion
  • 3 Tbsp. extra virgin olive oil
  • 1/3 c. parmesan cheese
  • 1 1/2 c. chicken, broth
  • 1/3 c. ten percent cream

Direcciones

  1. Saute/fry shallots, green and red onion, mushrooms, garlic in extra virgin olive oil.
  2. Add in broth, bring to a boil, add in risotto, and simmer.
  3. Continue to stir, cook till al dente.
  4. Add in parmesan cheese and cream.
  5. Let cold.
  6. With a 1" by 21/2" cookie cutter, make cakes out of cooked risotto.
  7. Grill cakes 4-5 min, or possibly till edges are crispy.
