- Saute/fry shallots, green and red onion, mushrooms, garlic in extra virgin olive oil.
- Add in broth, bring to a boil, add in risotto, and simmer.
- Continue to stir, cook till al dente.
- Add in parmesan cheese and cream.
- Let cold.
- With a 1" by 21/2" cookie cutter, make cakes out of cooked risotto.
- Grill cakes 4-5 min, or possibly till edges are crispy.
