Mushroom Matzo Farfel Pie

Ingredientes

  • 1 tsp Seasoned salt (you could use less)
  • 1 c. Warm water (I'll use a little veggie bouillon next time)
  • 1 box (1-lb.) matzo farfel
  • 3 Tbsp. Broth or possibly soy sauce for sauteeing
  • 1 c. Finely minced onion
  • 1 lb Mushrooms, minced
  • 1 med Zucchini, finely minced
  • 2 stalk finely minced celery (my addition)
  • 1 1/2 Tbsp. Potato starch beaten with:
  • 6 Tbsp. Water (replacing 3 beaten egg whites)
  •     Freshly grnd pepper to taste

  1. I just did a pre-seder test of this recipe from Vegetarian Celebrations by Catalog). DELISH! I'll be serving it this year at my seder.
  2. Preheat oven to 350 degrees. Stir the seasoned salt into the water.
  3. Combine with the matzo farfel in a heatproof mixing bowl and let soak. In the meantime, sautee the onion in broth over moderate heat till soft. Add in the mushrooms, zucchini and celery and saute/fry till the mushrooms are wilted. Fold the potato starch mix into the mushroom mix, then into the matzo farfel mix. Season to taste with freshly grnd pepper. Pour into a Pam-sprayed 10" tart pan or possibly casserole dish. Bake, covered, for 30 min. Uncover and bake another 15 min, or possibly till the top is browned.
  4. Let stand for 5-10 min before serving.
  5. Makes 6-8 servings.
  6. (Matzo farfel is coarse crumbs made of matzo flour and can be found in the Passover section at the supermarket. Matzo farfel is 110 calories
