.%20%20It%20seemed%20to%20turn%20out%20even%20better%20than%20usual,%20so%20I%20wanted%20to%20use%20it%20in%20my%20dinner%20tonight.%20%20I%20was%20stumped%20for%20awhile%20until%20I%20remembered%20a%20recipe%20I%20wanted%20to%20try%20from%20the%20the%20cookbook%20my%20sister%20bought%20for%20me,%20Hudson%20Valley%20Mediterranean%20-%20The%20Gigi%20Good%20Food%20Cookbook.%20%20I%20love%20this%20cookbook%20-%20so%20many%20wonderful%20recipes.%20%20One%20of%20the%20ones%20that%20really%20appealed%20to%20me%20was%20the%20Mushroom%20Ragu.%20%20I%20unfortunately%20didn't%20have%20the%20variety%20suggested%20in%20the%20recipe%20(different%20oyster%20mushrooms)%20-%20I%20only%20had%20button%20mushrooms,%20but%20the%20sauce%20adds%20so%20many%20wonderful%20flavor%20elements%20that%20marry%20so%20well%20together.%20%20There's%20a%20mellow%20yet%20brightness%20to%20the%20flavors.%3C/p%3E%3Cp%3EI%20sliced%20thin%20slices%20off%20of%20a%20baguette%20I%20had%20just%20made%20and%20toasted%20them%20under%20the%20broiler%20before%20topping%20with%20the%20mushroom%20ragout.%20%20A%20little%20extra%20Parmigiana-Reggiano%20over%20that,%20a%20couple%20of%20minutes%20under%20the%20broiler,%20and%20the%20real%20tasting%20began...%20I%20was%20in%20heaven!%20%20So%20good.%20%20The%20warm,%20delicious%20creamy%20sauce%20and%20mushrooms%20were%20exactly%20what%20I%20needed%20for%20this%20chilly%20day.%20%20You%20could%20also%20use%20grilled%20polenta%20rounds%20or%20softer%20bruschetta%20bread%20slices.%20%20You%20won't%20be%20sorry!%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20the%20largest%20skillet%20you%20have%20over%20medium%20heat.%20%20Add%20the%20shallots%20and%20garlic%20and%20cook%20until%20the%20shallots%20are%20translucent%20and%20the%20garlic%20is%20just%20starting%20to%20brown,%203%20to%204%20minutes.%20%20Increase%20the%20heat%20to%20medium-high%20and%20add%20the%20mushrooms,%20a%20little%20at%20a%20time,%20adding%20more%20as%20they%20cook%20down%20and%20start%20to%20shrink.%20%20Season%20with%20salt%20and%20pepper%20to%20taste,%20and%20keep%20stirring%20until%20the%20mushrooms%20begin%20to%20brown,%208%20to%2010%20minutes.%20%20Then%20deglaze%20the%20skillet%20with%20the%20white%20wine,%20and%20cook%20until%20the%20liquid%20has%20reduced%20to%20a%20few%20glossy%20tablespoons,%201%20to%202%20minutes.%20%20Stir%20in%20the%20cream,%20rosemary,%20and%20lemon%20zest.%20%20Remove%20the%20skillet%20from%20the%20heat,%20mix%20in%20both%20cheeses,%20and%20taste%20again%20for%20salt%20and%20pepper.%20%20Serve%20immediately%20or%20refrigerate%20the%20mushroom%20ragu%20for%20a%20few%20days%20and%20reheat%20it%20over%20a%20gentle%20flame%20with%20a%20touch%20of%20broth%20or%20cream.%3C/p%3E%3Cp%3ESource:%20%20%20Hudson%20Valley%20Mediterranean,%20The%20Gigi%20Good%20Food%20Cookbook,%20copyright%202009%3C/p%3E){kind=link}
