It's no secret that The Pioneer Woman's recipes are in my RSS feeds. I don't want to miss a recipe! Ree featured a Mushroom Soup that was spotted on her own Recipe Website called "Tasty Kitchen". I had just stocked up on cremini mushrooms at Costco-- about 3 pounds of them, that were such a good bargain. I figured I'd make something out of them! The following day, my sniffles turned into a full-blown cold that rendered my ability to taste and smell pretty into a dead zone. ,%20carrots%20and%20celery.%20%20Since%20I%20was%20feeling%20lousy,%20I%20used%20the%20food%20processor%20to%20chop%20the%20veggies%20for%20me.%20%20Of%20course,%20I%20needed%20mushrooms,%20which%20I%20washed%20and%20sliced--%20about%202%20pounds--%20they'll%20reduce.%20%20In%20a%20cast-iron%20skillet,%20I%20heated%20the%20oil%20and%20began%20to%20saute'%20the%20shallots.%20%20I%20chose%20shallots%20for%20two%20reasons--%20I%20had%20a%20lot%20of%20them,%20and%20I%20like%20their%20mild%20and%20sweet%20flavor%20that%20doesn't%20over%20power%20the%20flavor%20of%20the%20soup.%20%20Then%20again,%20my%20sense%20of%20smell%20was%20seriously%20damaged.%20I%20wanted%20heat!%20%20That's%20when%20I%20grabbed%20a%20jar%20of%20Thai%20Red%20Curry%20paste!%3C/p%3E%3Cp%3ESo,%20here%20is%20where%20the%20Pioneer%20Woman%20and%20I%20parted%20ways,%20and%20I%20ended%20up%20adapting%20the%20recipe%20to%20satisfy%20my%20sudden%20craving%20for%20Thai%20flavors.%20.%20%20I'm%20very%20much%20in%20the%20beginner%20stages%20of%20learning%20how%20to%20cook%20Thai%20food,%20and%20I%20have%20learned%20to%20love%20it%20a%20lot.%20My%20favorite%20flavors%20of%20Thai%20food%20includes%20lemongrass%20(which%20I%20didn't%20use%20in%20this%20soup),%20red%20curry,%20lime%20juice,%20coconut%20and%20cilantro.%20%20I%20added%20about%201%20teaspoon%20of%20the%20red%20curry%20paste--%20this%20stuff%20can%20be%20hot!%20Ree's%20recipe%20called%20for%20white%20wine.%20I%20used%20Dry%20Vermouth,%20because%20it's%20a%20fortified%20wine%20and%20it's%20perfect%20for%20cooking.%20I%20added%20a%20generous%20splash--%20oh,%20about%201/4%20cup.%20Leave%20it%20out,%20if%20you%20want.%20The%20alcohol%20does%20burn%20off.%3C/p%3E%3Cp%3ENow,%20while%20the%20veggies%20and%20aromatics%20are%20coming%20together,%20I%20started%20sauteing%20the%20mushrooms%20with%20some%20olive%20oil...%3C/p%3E%3Cp%3EI%20had%20used%201/2%20can%20of%20coconut%20milk%20for%20a%20recipe%20that%20I%20haven't%20blogged%20yet%20(I'm%20totally%20posting%20out%20of%20sequence).%20%20I%20decided%20to%20add%20this%20to%20the%20veggies,%20to%20flavor%20the%20soup%20with%20coconut--%20I%20was%20totally%20experimenting%20at%20this%20point.%3C/p%3E%3Cp%3EI%20gave%20the%20coconut%20milk%20a%20stir.%20%20P-Dub's%20soup%20had%20tomato%20juice%20in%20it.%20I%20deliberated,%20and%20decided%20to%20go%20ahead%20and%20add%20that.%20Then,%20I%20added%20the%20mushrooms%20to%20the%20soup.%3C/p%3E%3Cp%3ENow%20that%20the%20cooked%20mushrooms%20are%20stirred%20in,%20I%20added%20chicken%20stock%20(you%20could%20use%20vegetable%20stock%20to%20make%20this%20truly%20a%20vegetarian%20soup).%20I%20added%20two%20bay%20leaves%20and%20let%20the%20soup%20simmer%20for%20about%2020%20minutes.%20Last,%20I%20added%20about%201/2%20cup%20of%20Half%20&%20Half%20(you%20could%20use%20heavy%20cream...or%20milk).%3C/p%3E%3Cp%3EI%20prefer%20my%20soups%20on%20the%20thicker%20side.%20%20I%20keep%20a%20box%20of%20potato%20starch%20in%20my%20pantry.%20%20About%202%20Tablespoons%20of%20potato%20starch%20(you%20can%20use%20corn%20starch),%20mixed%20in%20with%20some%20of%20the%20liquid%20and%20whisked,%20prevents%20risks%20of%20lumpy%20soup.%20I%20never%20add%20the%20starch%20directly%20to%20the%20soup!%20%20Off-heat,%20I%20added%20the%20juice%20of%20one%20lime.%20%20Ree%20adds%20Parmesan%20cheese%20to%20her%20soup,%20which%20definitely%20made%20my%20mouth%20water.%20But,%20somehow,%20that%20didn't%20see%20to%20go%20with%20my%20Thai%20theme...%3C/p%3E%3Cp%3EThe%20finishing%20touch%20was%20to%20add%20fresh%20chopped%20cilantro.%20%20If%20you%20don't%20like%20cilantro,%20then%20use%20flat-leaf%20parsley.%20Fortunately,%20cilantro%20is%20a%20favorite%20herb%20in%20my%20household--%20and%20we%20even%20grow%20it!%3C/p%3E%3Cp%3EStuffy-nosed%20me%20took%20a%20first%20taste.%20%20Whoa!%20%20I%20could%20taste%20it!%20%20The%20red%20curry%20paste%20gives%20this%20soup%20a%20real%20kick!%20I%20liked%20it%20a%20lot.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20I%20asked%20my%20husband%20to%20help%20adjust%20the%20seasonings--%20which%20would%20be%20salt.%20It%20needed%20a%20little%20more,%20he%20said.%20%20%20It's%20a%20healthy%20soup,%20and%20I%20believe%20that%20spice%20really%20helps%20clear%20the%20sinuses.%20%20You%20can%20cut%20back%20on%20the%20red%20curry%20paste,%20if%20you%20don't%20like%20to%20much%20heat.%20%20I%20would%20use%20sherry,%20next%20time,%20rather%20than%20white%20wine.%20For%20some%20reason,%20sherry%20compliments%20mushroom%20soup.%20%20When%20I%20make%20Golden%20Cream%20of%20Mushroom%20Soup,%20that's%20my%20choice%20for%20booze--%20or,%20you%20can%20leave%20it%20out%20altogether.%20%20%20If%20you'd%20rather%20stick%20with%20Ree's%20original%20soup%20recipe,%20the%20link%20is%20here.%20%20In%20reading%20comments,%20though,%20I%20would%20have%20definitely%20added%20thyme%20to%20the%20soup.%20It's%20my%20favorite%20universal%20herb%20in%20soups.%3C/p%3E%3Cp%3EI'm%20linking%20this%20soup%20to%20Souper%20Sundays,%20hosted%20by%20the%20lovely%
