Mushroom Stuffed Meatloaf

Ingredientes

  • 2 c. sliced fresh mushrooms
  • 1 c. onion, minced
  • 2 T butter
  • 1/2 c. lowfat sour cream
  • 2 large eggs
  • 1/2 c. lowfat milk
  • 1 1/2 pound grnd beef
  • 3/4 c. bread crumbs
  • 2 teaspoon salt
  • 1 T Worcestershire sauce
  • 1 c. lowfat sour cream
  • 1 teaspoon horseradish
  • Dash of pepper
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • Dash of nutmeg

Direcciones

  1. Saute 1 cup mushrooms and onion in butter. Remove from heat and stir in lowfat sour cream. Set aside.Put together remaining ingredients except reserved mushrooms. Put half the mix into 9x5 inch loaf pan; make shallow trough down center. Spoon lowfat sour cream, mushroom mix into indentation. Shape rest of meat over filling. Seal edges. Bake 1 hour in 350 degree oven. Let stand 15 min before slicing. Garnish with remaining mushrooms.
  2. Put together above ingredients. Heat in saucepan over low heat. Serve hot with meatloaf.
