%20%22Why%20.%20.%20.%20they%20are%20beans%20on%20toast!%20DUH!%20Beans%20on%20toast%20I%20thought%20sounded%20quite%20good%20and%20they%20are%20.%20.%20.%20likewise%20spaghetti%20on%20toast%20.%20.%20.%20but%20let%20me%20tell%20you%20right%20now.%20I%20was%20not%20impressed%20with%20the%20mushrooms%20on%20toast.%20A%20tin%20of%20mushrooms%20heated%20and%20then%20spooned%20out%20onto%20toast.%20Toast%20made%20all%20soggy%20from%20the%20mushroom%20liquid%20.%20.%20.%20mushrooms%20all%20rubbery%20and%20lacking%20in%20.%20.%20.%20well%20any%20real%20mushroom%20flavour.%3C/p%3E%3Cp%3ECome%20on%20now.%20We%20can%20do%20better%20than%20that!%20Had%20I%20been%20in%20charge%20those%20poor%20residents%20might%20have%20had%20something%20a%20lot%20tastier%20.%20.%20.%20something%20like%20these%20delicious%20mushrooms%20on%20toast!%3C/p%3E%3Cp%3EBrowned%20in%20a%20bit%20of%20olive%20oil%20with%20some%20red%20onions,%20pancetta%20and%20a%20touch%20of%20garlic%20and%20oregano%20.%20.%20.%20the%20mushrooms%20all%20nicely%20browned%20on%20the%20edges,%20the%20pancetta%20crispy%20.%20.%20.%20the%20red%20onions,%20meltingly%20tender%20.%20.%20.%20a%20knob%20of%20butter%20stirred%20in%20at%20the%20end,%20and%20then%20the%20whole%20lot%20spooned%20over%20crisp%20and%20buttery%20slices%20of%20tasty%20sour%20dough%20toast.%3C/p%3E%3Cp%3ENow%20THAT%20.%20.%20.%20my%20friends%20.%20.%20.%20is%20mushrooms%20on%20toast%20worth%20digging%20in%20to!%20(If%20you're%20feeling%20truly%20indulgent,%20scrap%20some%20fresh%20Parmesan%20Cheese%20over%20top%20as%20well.%20Scrummy%20yummy!)%3C/p%3E%3Cp%3E*Mushrooms%20on%20Toast%20with%20Garlic,%20Pancetta%20and%20Oregano*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EDeliciously%20meaty%20mushrooms%20fried%20in%20olive%20oil,%20along%20with%20some%20cubed%20pancetta,%20garlic,%20red%20onions%20and%20finished%20off%20with%20a%20knob%20of%20butter.%20Served%20on%20crisp%20toast,%20these%20are%20fabulous%20and%20make%20a%20great%20light%20supper.%3C/p%3E%3Cp%3EWipe%20the%20mushrooms%20clean%20and%20then%20cut%20them%20into%20thick%20slices.%20Heat%20the%20olive%20oil%20in%20a%20skillet.%20Toss%20in%20the%20pancetta.%20Cook%20and%20stir%20until%20crisp.%20Remove%20with%20a%20slotted%20spoon%20and%20set%20aside.%20Add%20the%20mushrooms%20and%20onions%20to%20the%20drippings%20in%20the%20pan.%20Cook%20without%20disturbing%20until%20the%20mushrooms%20begin%20to%20turn%20golden%20brown.%20Stir%20and%20cook%20until%20they%20are%20the%20desired%20doneness.%20(I%20like%20lots%20of%20crispy%20edges.)%20Toss%20in%20the%20garlic%20and%20cook%20for%20about%202%20minutes%20longer.%20Add%20the%20cooked%20pancetta%20and%20heat%20through.%20Stir%20in%20the%20knob%20of%20butter,%20oregano%20and%20season%20with%20a%20good%20grinding%20of%20black%20pepper.%3C/p%3E%3Cp%3ELay%20out%20the%20four%20slices%20of%20toast%20on%20heated%20plates%20and%20spoon%20the%20cooked%20mushroom%20mixture%20over%20top,%20dividing%20it%20equally%20amongst%20the%20four%20plates.%20Sprinkle%20with%20parsley%20and%20serve.%3C/p%3E%3Cp%3ENote:%20if%20desired%20you%20can%20shave%20some%20fresh%20parmesan%20cheese%20over%20top.%20Very%20scrummy!%3C/p%3E){kind=link}
