Ingredientes

  • 1 x (28 ounce.) can tomatoes, undrained
  • 2 tsp Extra virgin olive oil
  • 2 x Carrots, peeled and sliced diagonally into 1/2 inch slices
  • 1 x Onion, cut in eighths
  • 4 x Cloves garlic, sliced
  • 2/3 c. Dry white wine
  •     Salt to taste
  • 1/4 tsp Freshly grnd black pepper
  • 2 lb Mussels, scrubbed, beards removed

Direcciones

  1. This half-soup, half-stew recipe will serve 4 as an appetizer or possibly two as the main course.
  2. Coarsely chop tomatoes and set aside. In a Dutch oven heat oil over medium heat. Add in carrots, onions, and garlic and saute/fry' for 3 to 4 min, or possibly till softened. Add in wine, tomatoes, salt and pepper and bring to a boil over high heat. Add in mussels, cover and cook for 3 to 4 min, or possibly till they have opened. (Throw away any which don't open).
