While the memories of our wonderful week in Maui are still with me, the relaxation part is beginning to fade. Work has been busy, as high school graduation is just three months away. There is a lot to be done, before we begin to shut down the school for our summer break.
That means that I'm back to thinking of quick and easy dinners. A friend of mine told me that she made my "Man-Pleasing Chicken" (super easy and always a hit). So, I got to thinking-- what if I picked up some fresh pork chops and used the same sauce?

.%20%20So,%20I%20got%20to%20thinking--%20what%20if%20I%20picked%20up%20some%20fresh%20pork%20chops%20and%20used%20the%20same%20sauce?%3C/p%3E%3Cp%3EThese%20are%20boneless%20pork%20chops.%20%20I%20like%20to%20cut%20shallow%20%22slits%22%20along%20the%20side,%20which%20prevents%20the%20chops%20from%20buckling.%20%20%20Using%20an%20oven-proof%20skillet,%20I%20put%20a%20little%20bit%20of%20olive%20oil%20in%20a%20non-stick%20pan.%20%20The%20chops%20were%20patted%20dry,%20then%20seasoned%20with%20kosher%20salt%20&%20fresh%20cracked%20pepper.%20%20On%20medium-high%20heat,%20I%20seared%20them%20until%20lightly%20golden%20brown--%20about%203%20minutes.%20(The%20oven%20was%20preheating%20to%20425F.)%3C/p%3E%3Cp%3EIn%20the%20meantime,%20I%20mixed%20equal%20parts%20Dijon%20mustard%20(not%20yellow)%20and%20pure%20Maple%20Syrup%20(not%20pancake%20syrup).%20%20I%20then%20added%20about%20two%20tablespoons%20of%20unseasoned%20Rice%20Vinegar.%20%20I%20decided%20to%20add%20a%20fourth%20ingredient--%20low-salt%20chicken%20broth--%20because%20I%20wanted%20a%20little%20extra%20sauce%20that%20would%20be%20a%20little%20bit%20thinner.%20TASTING%20NOTES:%20At%20first,%20I%20thought%20the%20Dijon%20mustard%20had%20a%20bit%20of%20a%20bite.%20%20So,%20I%20added%20an%20extra%20%22glug%22%20of%20Maple%20Syrup.%3C/p%3E%3Cp%3EAfter%20flipping%20over%20the%20chops,%20I%20turned%20off%20the%20heat,%20and%20poured%20the%20mustard-maple%20sauce%20all%20over%20the%20chops.%20%20Last,%20I%20sprinkled%20some%20fresh%20chopped%20rosemary%20(you%20could%20use%20thyme%20or%20skip%20the%20herbs%20altogether).%20The%20skillet%20went%20into%20the%20preheated%20oven%20for%2015%20minutes.%3C/p%3E%3Cp%3EIf%20these%20were%20thicker%20chops,%20I'd%20bake%20them%20for%20about%2025%20minutes.%20Look%20at%20that%20sauce!%20It%20became%20very%20thick.%3C/p%3E%3Cp%3EI%20removed%20the%20chops%20onto%20a%20plate,%20and%20covered%20them%20with%20foil.%3C/p%3E%3Cp%3EI%20used%20a%20little%20bit%20of%20chicken%20broth%20to%20thin%20the%20sauce%20out%20a%20little%20bit--%20just%20under%201/4%20cup,%20I%20would%20say.%3C/p%3E%3Cp%3EAs%20a%20side-dish,%20I%20pressure-cooked%20some%20Yukon%20Gold%20potatoes%20that%20I%20then%20baked,%20per%20one%20of%20my%20first%20posts%20(with%20my%20old%20point-and-shoot%20camera)%20for%20Crash%20Potatoes.%20%20%20The%20whole%20meat%20took,%20start%20to%20finish--%2045%20minutes.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Remember%20how%20I%20said%20I%20thought%20the%20Dijon%20mustard%20had%20a%20bit%20of%20a%20bite?%20Once%20the%20sauce%20reduced,%20the%20mustard%20became%20milder.%20%20Next%20time,%20I%20won't%20add%20that%20extra%20maple%20syrup.%20%20The%20end%20result%20was%20a%20sweet%20and%20savory%20glaze.%20%20This%20reminds%20me%20of%20the%20%20Cider%20Glazed%20Boneless%20Pork%20Loin%20Chops%20that%20I've%20made%20a%20few%20times.%20%20Only,%20this%20is%20much%20easier.%20Could%20you%20skip%20searing%20the%20chops,%20and%20just%20pour%20sauce%20on%20the%20raw%20pork%20chops?%20Yes,%20I%20think%20you%20could.%20It%20would%20save%20about%20four%20minutes.%20%20I'll%20stick%20to%20searing%20first,%20because%20that's%20how%20I%20usually%20roll%20with%20a%20frying%20pan.%3C/p%3E%3Cp%3EEnjoy,%3C/p%3E){kind=link}
