Ingredientes

  • 4 pork tenderloin steaks
  • 2 tbs Dijon mustard
  • 2 tbs breadcrumbs
  • Rosemary, fresh or dry
  • Salt and pepper
  • 6 tbs olive oil
  • 100 g green olives, pitted
  • Parsley leaves, chopped
  • 20 cherry tomatoes (approx, depending on the desired density of the sauce)

Direcciones

  1. Beat steaks slightly. Place in an oven proof dish, season with salt and pepper and brush with mustard.
  2. Sprinkle with breadcrumbs and rosemary, salt again and pour 4 tbs olive oil on top.
  3. Roughly chop olives and parsley in food blender. Half the tomatoes, add to olives.
  4. Stir in the remainig 2 tbs olive oil, season with salt and pepper.
  5. Cover steaks with olive and tomato salsa evenly.
  6. Cook the meat and the sauce in the oven at 200°C for 30 minutes or until soft and done.
