Receta Mustard pork tenderloin in olive and cherry tomato salsa

Succulent pork steaks in olive and cherry tomato salsa.

Ingredientes

4 pork tenderloin steaks

2 tbs Dijon mustard

2 tbs breadcrumbs

Rosemary, fresh or dry

Salt and pepper

6 tbs olive oil

100 g green olives, pitted

Parsley leaves, chopped

20 cherry tomatoes (approx, depending on the desired density of the sauce)

Direcciones
- Beat steaks slightly. Place in an oven proof dish, season with salt and pepper and brush with mustard.
- Sprinkle with breadcrumbs and rosemary, salt again and pour 4 tbs olive oil on top.
- Roughly chop olives and parsley in food blender. Half the tomatoes, add to olives.
- Stir in the remainig 2 tbs olive oil, season with salt and pepper.
- Cover steaks with olive and tomato salsa evenly.
- Cook the meat and the sauce in the oven at 200°C for 30 minutes or until soft and done.
