Receta Muttai Parotta (Egg Kothu Parotta)

Ingredients:

Maida - 250 gms

Method:

1. Sift the maida and salt together.

2. Beat 4 eggs in a bowl.

3. Add the sifted flour to the bowl along with ghee.

4. Knead well and keep aside for 45 to 60 minutes.

5. Pinch small balls of the dough and make parottas.

6. Keep aside to cool and then chop them into small pieces.

7. Heat oil in a pan.

8. Saute the onions, tomatoes and curry leaves for a minute or two.

9. Add salt and turmeric powder.

10. Add the chopped parottas and stir well.

11. Break the remaining eggs into the pan and cook until done.

12. Garnish with coriander leaves.

13. Serve hot.
